NEVERWINE is our first project, a proposal from

non-alcoholic wines for all audiences, tribute to some of the most important

native Spanish grape varieties that we love!

More than 15 years ago at elBulli we already detected that around

of 3.5% of customers did not drink alcohol. Today

we present our first Alc. 0% Vol. for all

those of you who can’t drink alcohol or who want to wear a

of healthy living.

Introduction of GoLo technology:

GoLo technology is a novel, patented wine alcohol reduction process with full recovery of the original wine flavor compounds. Depending on the desired alcohol content of the final product wine, none, or a portion of, or the entire essence stream can be added back to the de-alcoholized wine.

GoLo is a continuous, integrated distillation process carried out under deep vacuum to protect the quality of the wine by not exposing it to high temperatures. The maximum temperature to which the wine is exposed is 40 – 48°C. And stay time in that temperature is 1 second per Liter.

The technology integrates 3 separate distillation processes, Essence Stripping, Alcohol Stripping, and Alcohol Rectification into a single, continuous, once-through process.

One of the unique features of GoLo technology is the fully adjustable Essence Stripping operation. The operator can select from zero essence recovery up to >98% recovery. It is superior to the single-stage flash operation used by most competitive technologies. The alcohol removed from the wine is further rectified typically to 85% ABV ethanol, thereby maximizing the recovery of vinous water which increases the yield of de-alcoholized wine, while at the same time producing a valuable concentrated wine spirit by-product. This rectified portion can be used for other spirit products as a base as well as the now emerging RTD (ready to drink) products. The only moving parts in GoLo technology are the pumps, so power consumption and maintenance are minimal.
